Ready for the fireworks? Our fingers are crossed for good weather this Friday as we look forward to celebrating the 4th of July with friends, fireworks, outdoor picnics, and all the neighborhood cats we can find.
If you're looking for a healthy addition to picnic table, then we recommend simple carrot fries. The perfect accompaniment to veggie burgers on the grill, these crunchy carrots are delicious, slightly sweet, and quite possibly the healthiest thing you'll eat all day.
Carrot Fries Ingredients:
1 bunch of carrots
2 tbs olive oil
Salt and pepper to taste
· Wash and peel carrots. Let dry completely.
· Cut carrots in half lengthwise, keeping strips of an equal width to ensure even cooking.
· Toss carrot strips with olive oil, salt, and pepper, and distribute evenly on a lightly oiled baking sheet.
· Bake at 350 degrees for about 40 minutes, or until browned on outside and tender on the inside. Timing and temperature can vary depending on the size of carrots.
