Chocolate Chip Oatmeal Cookies

Just because it’s vegan, doesn’t mean it’s low-calorie. Luckily, ION isn’t a low-calorie restaurant. We’re a vegan restaurant that values high quality ingredients, natural foods, and everything in moderation - including a delicious chocolate chip cookie every now and then.

Our menu is practically overflowing with vegetables, beans, whole grains and other nutritional powerhouses, because we value our health and that of our customers. But life is about living, 

Among our favorite treats are these oatmeal chocolate chip cookies made with natural cane sugar, whole wheat flour, rolled oats, and the best dark chocolate we can get our hands on. While we love them fresh from the oven, vegan cookie dough is safe to eat raw, so don’t be afraid to sneak a taste!

CHOCOLATE CHIP OATMEAL COOKIES

Instructions:

1/2 block (7 oz) silken tofu

3/4 cup of vegan butter

1 3/4 cup natural cane sugar

2 1/2 cups whole wheat flour

1 teaspoon vanilla

1 Tablespoon cinnamon

1 teaspoon nutmeg

1/2 teaspoon baking powder

2 1/2 cup oats

2 1/2 cup vegan chocolate chips

1 cup chopped almonds

 

Instructions:

Preheat oven to 350 degrees.

Combine tofu, vegan butter, sugar, and vanilla with a whisk or mixer until just blended.

Add remaining ingredients and mix with wooden spoon or paddle attachment of your mixer, until combined.

Drop in 1/2 cup sized balls on cookie trays lined with parchment paper.

Bake for 7 minutes, press cookies down with spatula, and then bake an additional 5-7 minutes.
